You will soon feel the difference! *With our electric mill being down we are milling our flour with a stone ground mill. There is a texture difference, so expect this bread to be a bit heavier. Medium sized, chemical free collard greens. They have had a light frost which makes them sweeter. Great as a side dish or mixed with other greens. Try dribbling tahini/garlic/lemon sauce over greens that have been cooked with sauteed onions and garlic. Wash greens. Place a layer over the hot sauteed garlic and onions. Let them wilt before adding another layer of greens. continue until all greens have wilted. Place a lid over the skillet and keep on a low heat for 10 minutes. You might add an ounce or two of water seasoned with chicken seasoning over the greens before you simmer them with the lid on.

Arugula is an aromatic salad green. It is also known as rocket, roquette, rugula and rucola, and is popular in Italian cuisine. Like most salad greens, Arugula is very low in calories and is high in vitamins A and C. A 1/2 cup serving is two calories. Recipes : Insalata di finocchio, rucola e parmigiano by Chef Ken Calascione Ingredients 2 fennel bulbs 2 cups arugula 1 lemon, juiced Parmigiano cheese ( non dairy cheese may be used) Extra virgin olive oil cayenne Directions Loosely arrange the arugula on the bottom of a shallow salad bowl, and then add some cayenne pepper and drizzle some olive oil on top. Cut off the stems and leafy tops of the fennel, then finely slice the fennel into thin rounds and spread the slices over the arugula. Pour the lemon juice over the fennel and arugula and drizzle with more olive oil and grind more pepper on top. Shave the parmigiano with a potato peeler and cover the salad with the cheese, then serve. Arugula Pesto Ingredients 1 bunch arugula, stems removed (about 4 ounces) 2 3/4 teaspoons of coarse or Kosher salt 1/3 cup extra virgin olive oil Cayenne pepper to taste Directions Fill a large bowl with ice and add water, set aside. Fill a medium sized saucepan with water and the 2 1/2 teaspoons of salt, and bring it to a boil. Add the arugula and as soon as the water returns to a boil, remove the arugula with a slotted spoon and place it immediately into the ice water to stop the cooking process. Transfer the arugula to several layers of paper toweling or clean kitchen towels and allow to drain. Roll up the towels and squeeze as much moisture as possible from the arugula. Place the arugula in a blender jar and add the oil, 1/4 teaspoon of salt and the pepper and puree until the mixture looks like thick pesto. There will be a small amount of oil on the surface. Use immediately or transfer the mixture to a jar with a tight fitting lid if you are going to store it. This will keep for at least 5 days, refrigerated. Before using, stir the pesto to incorporate the oil accumulated at the top. Serve the pesto over some freshly cooked pasta or boiled potatoes.

Rounding out the "dirty dozen" of 49 fruits and vegetables tested are strawberries, apples, domestically grown blueberries, nectarines, sweet bell peppers, spinach, kale/collard greens, cherries, potatoes and imported grapes. Celery is a vegetable plant that is often excluded from the home garden because of its reputation for being demanding and difficult to grow. But in exchange for the effort home grown celery will reward you with flavor and nutritional value that surpasses that of the commercial varieties found at your local grocers.
